Elephant ear stand keeps tradition alive at fair

Debbie and Glenn Hinton have been serving up their golden deep-fried elephant ears at the West End Fair since 1982.

You won’t need a map to find the stand, just follow your nose and look for a long line of people and the logo of a friendly looking elephant with three baby elephants. The additional smaller elephants are in honor of their three grandchildren.

“When we first started out, we were both working. My husband was a correctional officer and I taught part time as a teacher,” she said.

Although the Hintons are retired now, they joke about how it is supposed to be a part-time business. Since the stand has become so successful, they are hoping their daughter, who is a nurse, and takes her vacation to help during the West End Fair, will take over the business one day.

Glenn Hinton said it isn’t just the many delicious toppings you can choose from that make the elephant ears so tasty.

“We use fresh buttermilk to make our sweet dough and we fry the dough in peanut oil. When we first started out, we used the iron skillets, but it is hard to control the temperature, so we changed to French fry cookers with electric temperature control,” he said.

When asked if he could estimate how many elephant ears he makes during the week of the fair, he replied, “I can’t even guess, but I do know we use 1 ton of flour during the week.”

If you happen to stop at the stand for an elephant ear, you will most likely be greeted by the Hintons’ three young grandchildren, who love to come along with their mother when she helps at the stand.
