Loving lobster

Once you get beyond the idea of picking up a live lobster and plunging it into boiling water to cook it, the process is pretty darn easy.

Contrary to popular belief, they don't scream, although my husband will often emit a high-pitch shrill noise just to freak me out.Lobsters don't have any vocal chords and experts say they can't process pain. If they do make any noise, it's the escape of air that has been trapped in the stomach, which is then forced out through its mouth.In any event, when the water boils, I leave the room and cover my ears. I'm not taking any chances.I don't eat lobster or any type of fish or seafood, other than tuna from a can, occasionally, and shrimp, sometimes.My husband, on the other hand, is a world champion lobster eater.The owners of all-you-can-eat seafood buffets are usually crying by the time we leave. And not because of me. When they stop by our table to ask if they could get me anything, I usually ask for a good book and a pillow, because I know how long we'll be there.Suffice it to say, when we go to Maine to visit family, my husband is in seventh heaven. In just two days this past summer he ate 12 pounds of lobster - 12 pounds!What made it even tastier for him was that the lobster came from the cove right near where my family lives. Not only that, but he also was out on the boat with the lobsterman, a family friend, who caught them.While Jim wasn't allowed to bait, lower or haul the traps, he did enjoy the ride and handpicking his dinner.Boiled LobsterIn a large pot, bring enough water to cover lobsters to a boil. Drop lobsters head first into boiling water. Bring to another boil and cook until lobster is bright red, about 12-15 minutes.Eat hot or cold.Serve with melted butter or ghee.Lobster Roll8 ounces cooked lobster1/2 cup celery, chopped1/2 cup mayonnaise1/2 teaspoon onion powderSalt and pepper to tasteSplit top or regular hot dog rolls, toastedChop cooked lobster meat into chunks.
