Mocha muffins make for a breakfast pick-me-up

With the holidays coming up and families baking together more often these days, let’s talk about Vegan Chocolate and Coffee Holiday Muffins.

On a special chilly and maybe snowy holiday morning, why not serve some delicious homemade baked treats? How about presenting some fresh seasonal fruit and a variety of some warm fresh muffins?

Alongside your bowl of seasonal fruits, why not offer these decadent devil’s food chocolate vegan muffins?

Packed with delicious chocolate flavor, these muffins are a fantastic treat warm out of the oven.

Vegan Mocha and Coffee Holiday Muffins

2 cups of all-purpose flour plus one teaspoon of flour (to mix into the chips)

½ cup of cocoa powder

¾ cup of vegan chocolate chips plus ¼ cup of chips (topping)

½ cup of almond or oat milk, unsweetened

1¼ cups of sugar

½ cup of applesauce, unsweetened

¾ of a cup of hot coffee

6 tablespoons of a stick (not tub) of vegan butter; melted or replace the vegan butter with the same amount of coconut oil

1½ teaspoon of pure vanilla extract

1 teaspoon of baking powder

1 teaspoon of baking soda

½ teaspoon of kosher salt

Sparkling large crystal or decorating sugar (topping)

Set all of your cold ingredients out to get to room temperature.

Preheat your oven to 375 degrees Fahrenheit. Line about a dozen to 14 muffin tins with muffin papers. Set aside for a few moments.

Sift together all of your dry ingredients in a bowl.

In a separate mixing bowl, whisk together all of your wet ingredients. Whisk all ingredients together now. Do not mix completely. Toss your chocolate chips with flour and add the chips into your muffin batter. This will ensure that your chips will not sink to the bottom of your muffins.

Use a large ice cream scooper, equally portion scoops of batter into each muffin liner. Sprinkle the topper chips on top and sprinkle your sparkling sugar on top.

Bake muffins for about 18-20 minutes or until tested done. You want a few moist crumbs on the tester. Set aside in the muffin pan to cool on top of a cooling rack for 5 minutes. Remove muffins.
