Spring for popcorn with St. Patrick’s Day flair

St. Patrick’s Day and the coming spring season remind us that green is everywhere.

Today, The Popcorn Board brings you tasty, green-inspired recipes to make and enjoy this month.

Try their new recipe for Mint Chocolate Chip Popcorn which blends melted chocolate and mint extract into popcorn deliciousness. Watch it magically disappear!

Or mix green coated candies with popcorn for a simple Paddy Party treat. Or melt marshmallows and mix in popcorn and mint chocolate candies to make Minty Green Popcorn Clusters.

Everyone will be dancing a jig after one delicious bite of these St. Patrick’s Day themed popcorn recipes.

Mint chocolate chip popcorn

Yield: 8 servings

8 cups popcorn

3 cups mini marshmallows

2 tablespoons butter

1 1/2 teaspoons mint extract

1 teaspoon vanilla extract

1/2 cup mini chocolate chips

1/2 cup dark chocolate, melted

Transfer popcorn to large bowl.

In medium saucepan set over medium heat, add marshmallows and butter; cook, stirring frequently, for 3 minutes or until smooth and melted. Stir in mint extract and vanilla extract; pour over popcorn.

Add chocolate chips to popcorn mixture; toss to combine. Spread mixture out on parchment paper–lined baking sheet and drizzle with dark chocolate.

Let stand until set. Break into pieces to serve. Store in airtight container in the refrigerator for up to 1 week.

Tip: For a classic green mint color, add a few drops of green food coloring to melted marshmallow mixture if desired.

Double Chocolate Popcorn Balls

Yield: 18 balls

1/2 cup sugar

1/2 cup corn syrup

1/4 cup butter or margarine

2 tablespoons cocoa powder

8 cups freshly popped popcorn

1 cup semisweet mini chocolate baking bits

Combine sugar, corn syrup, butter and cocoa in medium saucepan; bring to a boil.

Add popcorn, stirring until evenly coated. Remove from heat. Stir in semisweet mini chocolate pieces. Cool slightly.

Shape into 2-inch balls.

Minty green candy crunch clusters

Yield: 32 Clusters

12 cups unsalted, unbuttered popped popcorn

4 cups mini marshmallows

2 tablespoons butter or light olive oil

1/2 teaspoon salt

1 tablespoon green food coloring

1/4 teaspoon peppermint extract

1 cup green candy-coated chocolate candies

Place popcorn in large mixing bowl.

In saucepan set over medium heat, melt marshmallows, butter and salt, stirring occasionally, until smooth. Remove from heat; stir in food coloring and peppermint extract.

Immediately toss marshmallow mixture with popcorn; let cool for 2 to 3 minutes or until cool enough to handle. Toss with chocolate candies.

Shape 3 tablespoonfuls of popcorn mixture into small cluster; repeat with remaining popcorn mixture to make about 32 clusters. Place on waxed paper-lined baking sheet; let cool completely.

Tip: Food coloring can be found in the baking aisle of the supermarket or grocery store.
