Lehighton bakery one of nine to feature GS cookies

They may not get a badge, but the recognition a Lehighton bakery continues to garner will do just fine.

Blended Bakery has earned the distinction of being one of nine bakeries chosen to feature the Girl Scouts of Eastern PA scrumptious new cookie.

Its name is the toast-yay, a French toast-inspired cookie dipped in delicious icing and full of flavor in every bite, according to owner Christina Yurasits.

“They contacted us in the beginning of November and let us know they were watching us and loved our social media presence, and our community response and how we enjoy doing things in the community,” Yurasits said. “And they had let us know they wanted us to create a product featuring their products.”

In the meantime, Yurasits said she wasn’t allowed to discuss or let anyone know the bakery was doing it.

“I had to keep it all hush-hush until today,” she said. “I’m flattered; I can’t believe how much of an honor it is to work with the Eastern Pa Girl Scouts, and to be a part of something so incredible, it’s kind of an honor for me to tag along.

“I was a Girl Scout, and I asked them, “Can I have a badge for this,” she quipped.

For Yurasits, the process came easy, seeing as how she loves French toast and loves baking cakes.

So, she baked a Madagascar vanilla cake, added cinnamon, brown sugar and maple syrup, and in between each layer, they added their brown sugar cinnamon bun glaze, and then iced the cake with their maple butter cream. Then, Yurasits said they did a maple drizzle and garnished the cakes with the French toasted cookies edible gold paint, glitter and stars.

“It was just the prettiest cookie,” she said. “I have a lot of fun creating cake and loved the end result; it tasted amazing (and the) whole family shared the cake.”

Yurasits said she was humbled to be able to take part in the activity.

“Just the whole experience was incredible,” she said. “I emailed them a picture of the cake and they absolutely loved it as well.”

Yurasits said it’s her understanding that they plan to bring all nine (bakeries) together and bring their products together and do some photo opportunities with them and feature their cakes or some stories on their bakery in their Girl Scouts magazine.

“We have a lot of people that come to us and allow us to do creative control; it’s always nice to have that freedom,” she said. “It wasn’t too daunting for me; I kind of jumped right into it and knew what I wanted to do right away.

“I love doing what I do, so it’s kind of easy at times,” she said.

Yurasits noted they are taking preorders for Girl Scout Cookies.

“Blended Bakery will have Girl Scouts or Brownies selling, not sure of the date, people can watch our Facebook page to see when we’re having a cookie sale,” she said. “We will have cupcakes for sale featuring the new cookie while supplies last.”
