A new take on sausage and pepper sandwiches

Growing up, Mom-Mom used to make sausage and peppers often.

They would bring dinner for my siblings and I when Mom-Mom and Poppy would watch us. We would have sausage links and peppers on rolls, with crusty bread or served alongside mashed potatoes or rice.

During the autumn season, you can find sandwiches like this at festivals and fairs.

However, when you grind the meat yourself, you know what exactly is going into your sausage burger. You can control the fat amount, if you want links in a casing and simply the amount of roasted peppers and mozzarella topping your sandwich.

This is my take on a classic street, bazaar, fair, festival, family gathering or block party burger, sandwich or slider.

Served with your favorite fries and a drink, this sausage, pepper and mozzarella sandwich is a pleaser burger. Enjoy making this all year long any time of day juicy and flavorful burger.

Try this sausage burger on an English muffin with scrambled eggs. Better yet, top the burger with a sunny side up egg.

How about serving it on a bed of quinoa, rice or your favorite pasta. Create your own homemade burgers.

Sensational Sausage Sandwich Patties

4 pounds of coarse ground pork

1 tablespoon of fennel seeds

1 tablespoon of paprika

2 teaspoons of dry chili flakes

1 teaspoon of cayenne pepper

A little over a tablespoon of salt

1 teaspoon of ground black pepper

2 cloves of fresh minced garlic

1 tablespoon of dextrose

3 tablespoons of water

Mix all ingredients together, until mixture is tacky. Form into uniform burgers (I weigh my burgers out to about ¼ pound each. You can do any size patties that you wish. I store the burgers in the refrigerator for an hour or so before cooking them, even up to 3 days stored in the refrigerator. The burgers have spices in them, to keep them fresh.)

Sear on the stovetop or grill until cooked thoroughly. Usually sausage burgers should read 160 degrees on a cooking thermometer. Top with roasted peppers, ketchup or marinara sauce and mozzarella cheese slices. I like to use thick slices of mozzarella cheese as toppers for my burgers, and then peppers to taste. Try these out and enjoy.
