Egg nog reigns supreme in a season of snowmen, holiday shopping, and knit hats with matching scarves.

But, as popular as egg nog may be, many people are unaware of how versatile the festive beverage can be as an ingredient, in everything from egg nog pancakes to egg nog cheesecake.Turkey Hill Dairy in Lancaster County will produce more than 122,000 gallons of its traditional Egg Nog and Light Vanilla Nog this year, and another 175,000 containers of Egg Nog Ice Cream."A vast majority of egg nog will be consumed the old-fashioned way in a glass, sometimes with a sprinkle of nutmeg," said Turkey Hill President John Cox. "But when you try it in a recipe, it opens up a whole new world for egg nog lovers."If you're an egg nog lover, here's a recipe from Turkey Hill.Spiced Egg Nog PancakesMakes 16 pancakes.2 cups all-purpose flour1 tablespoon baking powderOne-half teaspoon saltOne-quarter teaspoon ground nutmeg2 eggs, lightly beaten2 cups Turkey Hill Egg Nogcup cooking oilIn a large bowl, combine flour and the other dry ingredients. In a separate bowl, combine the remaining ingredients and then stir into flour mixture.
